Lussekatter kan l\u00e4tt bli lite torra efter ett tag, s\u00e5 i \u00e5r har jag k\u00e4mpat f\u00f6r att f\u00e5 dem riktigt saftiga. Kesella \u00e4r ett gammalt bepr\u00f6vat trick, och sen s\u00e5 f\u00e5r man inte ha i f\u00f6r mycket mj\u00f6l. L\u00e5ngj\u00e4sningar har jag jobbat med ett tag nu, s\u00e5 det var \u00e5rets nyhet. Sen s\u00e5 f\u00e5r man ju inte sn\u00e5la med saffranen heller&#8230; <\/p>\n<p>De h\u00e4r lussekatterna blev riktigt fluffiga och saftiga. Men \u00e4ter man inte alla p\u00e5 en g\u00e5ng (och det rekommenderas inte) s\u00e5 h\u00e5ller de sig \u00e4nd\u00e5 b\u00e4st i frysen.<\/p>\n<h2>Lussekatter<\/h2>\n<p><strong><em>F\u00f6rdeg<\/em><\/strong><br \/>\n50 g j\u00e4st<br \/>\n3 dl mj\u00f6lk (kall)<br \/>\n450 g vetemj\u00f6l special<\/p>\n<p>L\u00f6s j\u00e4sten i den kalla mj\u00f6lken, kn\u00e5da ihop med mj\u00f6let. L\u00e5t j\u00e4sa ca 3 timmar.<\/p>\n<p><em><strong>Stora degen<\/strong><\/em><br \/>\n80 g sm\u00f6r<br \/>\n150 g kesella<br \/>\n1 g saffran<br \/>\n90 g (1 dl) socker<br \/>\n1 \u00e4gg<br \/>\n5 g salt<br \/>\n240 g vetemj\u00f6l special (ev n\u00e5got mindre)<\/p>\n<p>\u00c4gg, russin<\/p>\n<p>Mortla saffran med lite socker (i de gamla recepten st\u00e5r en sockerbit, men det har jag aldrig hemma). Blanda alla ingredienser i assistentens bunke. H\u00e4ll ev en gnutta mj\u00f6lk i morteln s\u00e5 du f\u00e5r med dig det sista av saffranen. Kn\u00e5da p\u00e5 l\u00e5g hastighet n\u00e5gra minuter, \u00f6ka hastigheten och kn\u00e5da till en smidig deg som sl\u00e4pper fr\u00e5n kanterna. L\u00e5t degen j\u00e4sa i bunken ca 1 timme.<\/p>\n<p>S\u00e4tt ugnen p\u00e5 225 grader. Tag upp degen p\u00e5 en b\u00e4nk och baka ut till valfria lusse-former (l\u00e5t fantasin fl\u00f6da!). L\u00e5t lussebullarna j\u00e4sa 15-20 minuter. Pensla sedan med uppvispat \u00e4gg och tryck ner russin d\u00e4r du tycker det passar.
